Make a marinade by mixing all the ingredients. Rub the marinade on both sides of the chicken. Cover and refrigerate for 2 hours.
Remove chicken from the refrigerator 30 minutes before baking. Preheat the oven to 200°C for 10 minutes.
Place the chicken in a lightly greased baking dish and bake for about 40 minutes. Turn the chicken breasts halfway through cooking time to ensure even browning. If you are using a meat thermometer, bake until the internal temperature of the thickest part is 165°F.
Remove the chicken from the oven and cover it with an aluminium foil. Let it sit for 10 minutes before serving.
NOTE - If desired, bake and then broil the chicken for a few minutes for a browned finish.
