Ingredients
- 1 1/2 cups Tomato chopped
- 1 cup Thick coconut milk
- 1/2 cup Onion chopped
- 1 teaspoon Ginger chopped
- 1 teaspoon Garlic chopped
- 1 number Green chilli chopped
- 1 teaspoons Coriander powder
- 1/4 teaspoon Chilli powder
- 1/4 teaspoon Kashmiri chilli powder
- 1/4 teaspoon Turmeric powder
- Water as required
- Salt to taste
For Seasoning
- 1/2 teaspoon Mustard seed
- 1/4 teaspoon Cumin seed
- 6 numbers Shallot sliced
- 1 number Dry red chilly
- 1 sprig Curry leaf
- Coconut oil

Instructions
- Cook all the ingredients except coconut milk, until the tomatoes are done. Add coconut milk, mix well and cook for few more minutes.
- Heat oil in a small pan, fry mustard seed, cumin seed, shallot, dry red chilly and curry leaf, add to the curry.
- Serve with plain rice.
- NOTE - One cup = 250 ml, one teaspoon = 5 ml
