Restaurant-style vegetable fried rice is a flavorful Indo Chinese style vegetable fried rice.

Ingredients
For Cooking Rice
- 1 1/2 cups Basmati rice
- 8 cups Water
- 1 1/2 teaspoons Vegetable oil
- 3/4 teaspoon Salt
Other Ingredients
- 1 tablespoon Garlic chopped
- 1/4 cup Celery chopped
- 1/2 cup Onion chopped
- 1/2 cup Carrot chopped
- 1/2 cup Beans chopped
- 1/2 cup Capsicum chopped
- 1 1/2 tablespoons Soy sauce
- 1 tablespoon Chilli sauce
- 1/2 teaspoon Vinegar
- 1 1/2 numbers Knorr chicken cube (15 grams)
- 1/2 teaspoon Pepper powder
- 1/4 teaspoon Sugar
- 1 1/2 tablespoons Vegetable oil
For garnishing
- 1/4 cup Spring onion chopped

Instructions
- Wash and soak the rice for 15 minutes. Drain the water and keep it aside.
- Combine water, oil, and salt in a saucepan and bring to boil. Add rice and cook until 98% done. Drain the water completely and set aside to cool.
- Heat oil in a large pan. Add garlic and saute until the garlic starts to turn golden. Add all the vegetables including onion and celery, saute it for a minute on high flame.
- Reduce the flame and add sauces, vinegar, and chicken cube, mix well. Now add the cooked rice, pepper powder, and sugar. Mix well on high flame until combined.
- Turn off heat and garnish with spring onion.
- Serve with chilli chicken, gopi manchurian, etc.
- NOTE - Prepare all the ingredients before you start cooking.
- Cool the rice completely before adding it to the pan.
- No need to add any extra salt as the sauces and chicken cubes are extremely salty. Give the fried rice a taste and add salt if needed.
- One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
