Carrot halwa or gajar ka halwa is an Indian dessert made with carrots, milk, sugar, ghee, etc. It tastes great either with vanilla ice cream or on its own.

- 2 cups Carrot grated
- 3 cups Whole milk
- 1/3 - 1/2 cup Sugar
- 1/2 teaspoon Cardamom powder
- 1/4 cup Cashew nuts
- 2 tablespoon Raisins
- 4 tablespoons Ghee

Instructions
- Heat 3 tablespoons ghee in a large pan and fry cashew nuts and raisins, keep aside.
- Add grated carrots to the same pan and saute for about 10 minutes on medium flame or until raw smell goes.
- Add milk and let it boil. Reduce flame and cook until the carrots are soft and the milk is evaporated. Stir occasionally.
- Add sugar, mix well and saute until the halwa leaves the sides of the pan.
- Finally, add cardamom powder, cashew nuts, raisins, and 1 tablespoon ghee. Mix well and remove from fire.
- Serve warm or chilled.
- NOTE - I used regular orange carrots in this recipe.
- One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
