Ulli vada or onion fritters are one of the most popular spicy snacks at tea stalls in Kerala.

Ingredients
- 3 cups Onion thinly sliced
- 1 1/2 teaspoons Ginger chopped
- 3 numbers Green chilli chopped
- 2 sprigs Curry leaves chopped
- 1/3 cups Besan (gram flour)
- 2 tablespoons Rice flour roasted
- 1/2 teaspoon Chilli powder
- 1/8 teaspoon Asafoetida powder
- 1/2 teaspoon Salt
- Oil for deep frying

Instructions
- In a mixing bowl, add sliced onion, ginger, green chilli, curry leaves, and salt. Mix well with your hand and keep aside for 10 minutes.
- In another bowl, mix the gram flour, rice flour, chilli powder, and asafoetida powder.
- Add the flour mixture to the onion mixture and mix well. Do not add any water as the moisture in the onion mixture is enough to coat everything together.
- Heat oil in a deep pan. Take 1 1/2 tablespoons of batter in your hand, flatten slightly with your thumb and gently add to the hot oil. Fry both sides on medium heat until golden brown.
- Transfer to a paper towel to drain excess oil. Serve hot with tea or coffee.
- NOTE - One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
