For Seasoning

Coconut oil
Instructions
Cook all the ingredients except coconut milk, until the tomatoes are done. Add coconut milk, mix well and cook for few more minutes.
Heat oil in a small pan, fry mustard seed, cumin seed, shallot, dry red chilly and curry leaf, add to the curry.
Serve with plain rice.
NOTE – One cup = 250 ml, one teaspoon = 5 ml
