Make a marinade by mixing all the ingredients. Rub the marinade on both sides of the chicken. Cover and refrigerate for 2 hours.
Remove chicken from the refrigerator 30 minutes before baking. Preheat the oven to 200°C for 10 minutes.
Place the chicken in a lightly greased baking dish and bake for about 40 minutes. Turn the chicken breasts halfway through cooking time to ensure even browning.
Remove the chicken from the oven and cover it with an aluminium foil. Let it sit for 10 minutes before serving.
NOTE – If desired, bake and then broil the chicken for a few minutes for a browned finish.
If you are using a meat thermometer, bake until the internal temperature of the thickest part is at least 75°C.
