Rava kesari is a melt in the mouth sweet made with semolina, ghee, sugar, etc. It is very popular in South India.

Ingredients
1/2cupRava(semolina)
1/2cupGheemelted
3/4 – 1cupSugar
1 1/4cupHot water
1/4cupCashew nuts
2tablspoonsRaisins
1/2teaspoon Cardamom powder
1/16teaspoonYellow food color
1 PinchSalt
Instructions
Heat ghee in a large pan and fry cashew nuts and raisins, keep aside.
Add semolina to the same ghee and fry until slightly golden and aromatic. Stir frequently for even roasting. Add boiling water and salt, mix well and lower the flame. Cover and cook until the water is completely dry.
Add sugar and food color, mix well until sugar melts and the mixture is dry. Add cashew nuts, raisins, and cardamom powder, mix well for 2 – 3 minutes.
Pour the Kesari immediately into a pan or bowl. Serve hot or warm.
NOTE – One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
