Pork Ularthiyathu
Pork ularthiyathu is a Kerala style pork dry roast. Fatty pork is best suited for this recipe as it makes the dish tastier.

Ingredients
  • 750grams Porkcut into small cubes
  • 1 cup Onionsliced
  • 1/4cup Shallotsliced
  • 1 1/2tablespoons Gingersliced
  • 1 1/2tablespoons Garlicsliced
  • 1number Green chillisliced
  • 2teaspoons Chilli powder
  • 4teaspoons Coriander powder
  • 1/2teaspoon Turmeric powder
  • 3/4 teaspoon Garam masala
  • Pepper powderas required
  • 2sprigs Curry leaves
  • Saltto taste
  • Oilfor sauteing
Instructions
  1. Heat oil in a pan and add onion, shallot, ginger, garlic, and green chilli, saute till the onion becomes light brown.
  2. Add chilli powder, coriander powder, and turmeric powder along with little water and saute till oil separates. Add pork pieces, mix well, and pressure cook until the pork is almost done. (I did not add any water)
  3. Transfer the pork along with the gravy to a wide pan. Add garam masala, pepper powder, and curry leaves. Cook on low flame until the pork is done and gravy is dry.
  4. Serve with rice, chapati, appam, etc.
  5. NOTE – One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
