Pork ularthiyathu is a Kerala style pork dry roast. Fatty pork is best suited for this recipe as it makes the dish tastier.

Ingredients
750gramsPorkcut into small cubes
1 cupOnionsliced
1/4cupShallotsliced
1 1/2tablespoonsGingersliced

1numberGreen chillisliced
2teaspoonsChilli powder
4teaspoonsCoriander powder
1/2teaspoonTurmeric powder
3/4 teaspoonGaram masala
Pepper powderas required

Instructions
Heat oil in a pan and add onion, shallot, ginger, garlic, and green chilli, saute till the onion becomes light brown.
Add chilli powder, coriander powder, and turmeric powder along with little water and saute till oil separates. Add pork pieces, mix well, and pressure cook until the pork is almost done. (I did not add any water)
Transfer the pork along with the gravy to a wide pan. Add garam masala, pepper powder, and curry leaves. Cook on low flame until the pork is done and gravy is dry.
Serve with rice, chapati, appam, etc.
NOTE – One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
