Fish vattichathu or Kottayam style fish curry is a spicy red fish curry. It goes well with rice, tapioca etc.

Instructions
Heat coconut oil in a pan, saute shallot, ginger, and garlic till light brown. Add Kashmiri chilli powder, chilli powder, and turmeric powder along with little water and saute till oil separates, and the mixture turns dark brown.
Add the required amount of water, gambooge, and salt. Bring to boil. Place the fish pieces gently into the gravy and rotate the pan to get the pieces covered with gravy. Cook till the fish is cooked and the gravy is thick. Remove from fire.
Heat oil in a small pan, fry mustard seed, fenugreek seed, shallot, curry leaves and add to fish vattichathu.
NOTE – Soak the kudampuli in little water before adding to the curry.
