Cornflake Cookies
These cornflake cookies are very crunchy and buttery. I added milk chocolate chips to make them extra special.

  • 125grams Buttersoftened
  • 110grams Caster sugar
  • 1number Egg yolk
  • 150grams Plain flour
  • 1 1/2cups Cornflakes
  • 1/3cup Milk chocolate chips
  • 1/2teaspoon Baking powder
  • 1/2teaspoon Vanilla extract
  • 1pinch Salt
  1. Preheat oven at 150°C for 10 minutes.
  2. Beat butter and caster sugar in a bowl with an electric mixer until light and fluffy. Add egg yolk and vanilla extract, beat until combined.
  3. Stir in sifted flour, baking powder and salt mixture. Add cornflakes and chocolate chips, mix well. (Slightly crush the cornflakes with your hand before mixing)
  4. Drop level tablespoons of mixture about 5 cm apart on baking paper-lined oven trays. Bake for 16 – 18 minutes or until lightly golden brown.
  5. Stand cookies on trays for 5 minutes before lifting onto a wire rack to cool. Store in an airtight container.
  6. NOTE – One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
