For Soup
  • 3 cups Chicken stock
  • 1/2 cup Chicken cooked and shredded
  • 11/2 teaspoons Cornflour
  • Lime juice to taste
  • Black pepper powder to taste
  • Salt to taste
For Chicken Stock
  • 250 grams Chicken pieces
  • 6 cups Water
  • 1/2 cup Onion chopped
  • 1 teaspoon Ginger chopped
  • 1 teaspoon Garlic chopped
  • 4 numbers Clove
  • 1 number Cinnamon piece
  • 1 teaspoon Black peppercorn crushed
  • 1/2 teaspoon Salt
For Garnishing
  • 3 numbers Shallot sliced
  • 2 teaspoons Ghee

Chicken Clear Soup
Instructions
  1. Combine all the ingredients listed under 'For Chicken Stock' in a deep pan and bring to boil. Reduce flame and cook until the chicken is done and water is reduced to 3 cups.
  2. Strain the stock into another pan. Discard everything except chicken pieces. Shred the chicken pieces with your hand and keep aside.
  3. Add lime juice, cornflour and shredded chicken to the stock and bring to boil. Adjust salt and pepper.
  4. Heat ghee in a small pan, fry sliced shallot and add to the soup. Serve hot.
  5. NOTE - Mix the cornflour with one tablespoon water before adding to the soup.
  6. One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
