Carrot halwa or gajar ka halwa is an Indian dessert made with carrots, milk, sugar, ghee, etc. It tastes great either with vanilla ice cream or on its own.

Ingredients
2cupsCarrotgrated
3cupsWhole milk
1/3 – 1/2cupSugar
1/2teaspoonCardamom powder
1/4cupCashew nuts
2tablespoonRaisins
4tablespoonsGhee
Instructions
Heat 3 tablespoons ghee in a large pan and fry cashew nuts and raisins, keep aside.
Add grated carrots to the same pan and saute for about 10 minutes on medium flame or until raw smell goes.
Add milk and let it boil. Reduce flame and cook until the carrots are soft and the milk is evaporated. Stir occasionally.
Add sugar, mix well and saute until the halwa leaves the sides of the pan.
Finally, add cardamom powder, cashew nuts, raisins, and 1 tablespoon ghee. Mix well and remove from fire.
Serve warm or chilled.
NOTE – I used regular orange carrots in this recipe.
One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
