Baked potato cubes are an easy side dish that goes well with almost everything. They are a great alternative to mashed potatoes or french fries. These baked potato cubes are crispy on the outside and soft on the inside.

Ingredients
500gramsPotato(3 cups)
1/4tspBlack pepper powder
1/4tspGarlic powder
1/2 teaspoon Dried parsley leaves
1/2teaspoon Salt
1tablespoon Olive oil
Instructions
Peel and cut the potatoes into 1-inch cubes.
Bring a large pot of water to boil. Add the potato cubes and boil for 5 minutes.
Drain the potatoes into a colander and allow them to cool.
Preheat oven at 200°C for 10 minutes.
Toss the potatoes with olive oil. Sprinkle the black pepper powder, garlic powder, dried parsley leaves, and salt mixture over the potatoes and toss them until evenly coated.
Spread the potatoes onto a baking paper-lined oven tray in a single layer.
Bake for 40 minutes or until done, stirring halfway through cooking time.
Serve immediately.
NOTE – Do not parboil the potato cubes for more than 5 minutes, or they will end up mushy.
You can replace the dried parsley with any herbs such as rosemary, oregano, etc.
One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
