Vegetable stew is a mild vegetable curry flavoured with coconut milk and spices.

Ingredients
  • 1 1/2cups Potatocut into small cubes
  • 1/2cup Carrotcut into small cubes
  • 1/4cup Green peasfresh or frozen
  • 1/2cup Onioncut into small cubes
  • 1number Green chilliSlit
  • 1teaspoon Gingersliced
  • 1Piece Cinnamon
  • 3numbers Clove
  • 2numbers Cardamom
  • Black pepper powderto taste
  • 1 1/4 – 1 1/2cups Thin coconut milk
  • 1/2cup Thick coconut milk
  • 1Sprig Curry leaf
  • Saltto taste
  • 1teaspoon Ghee
  • Coconut oilto saute
Instructions
  1. Cook all the vegetables with little water and salt, keep aside.
  2. Heat coconut oil in a pan and splutter cinnamon, clove and cardamom. Add onion, ginger and green chilli, saute for few minutes till the onion becomes transparent.
  3. Add cooked vegetables and thin coconut milk, boil until the curry is thick. Add thick coconut milk and pepper powder, mix well. Remove from heat.
  4. Heat 1 teaspoon ghee in a small pan and fry curry leaves, add to the stew.
  5. Serve with appam, idiappam etc.
