  1. Preheat oven at 160°C for 10 minutes.
  2. Beat butter, caster sugar and brown sugar in a bowl with electric mixer until light and fluffy. Add egg and vanilla essence, beat until combined. Stir in sifted flour, baking soda and salt mixture. Add cashew nuts and raisins, mix well.
  3. Drop level tablespoons of mixture about 5 cm apart on baking paper lined oven trays. Bake for 12 minutes or until browned lightly. Stand cookies 2 minutes before lifting onto wire rack to cool.
  4. NOTES - Sift together the flour, baking soda and salt.
  5. One cup = 250 ml, one tablespoon = 15 ml, one teaspoon = 5 ml.
